Peeled Iranian pistachio kernels cut down to an even 3–5 mm. Not chopped by hand and not a bag of mixed fragments — a consistent grade, which is the entire reason to buy it rather than make it.
Why uniformity is the product
Hand-chopping gives you a range from dust to half-kernels, and that range shows. Fines burn while the larger pieces stay raw. Coating a cake produces a patchy surface. Folded through a batter, the heavy pieces sink and the dust muddies the crumb. An even cut solves all of it at once — every piece behaves the same way, in the oven and on the plate.
How to use
- Coating. Press onto the sides of cakes and entremets, or roll truffles and bonbons through for an even shell.
- Crunch layers. Fold into praliné, feuilletine or a croustillant base.
- Batters and doughs. Cookies, muffins, brownies, banana bread and streusel — the size holds through the bake.
- Ice cream and gelato. Ripple through or fold in for texture without whole-nut resistance.
- Toppings. Viennoiserie, granola, yoghurt bowls, porridge and açaí.
- Savoury. Dukkah, herb crusts and finishing for roasted vegetables.
Which size?
Granules go faster than people plan for, because coating and folding both take real quantity rather than a pinch. As a rule, 80–120 g covers the sides of a standard 20 cm cake.
- 250 g. Two to three cakes coated, or five or six batches of cookies, muffins or streusel.
- 500 g. Four to six cakes, or a dozen batches. Suits a home baker taking orders or a café with a pistachio coating on the standing menu.
- 1 kg. Eight to twelve cakes, or a full week of production baking. The size that makes a pistachio-coated cake viable as a permanent item rather than a special.
Working notes
Granules absorb moisture faster than slivers because of the surface area, so add them late to anything wet if crunch matters. For toasting, 140°C for four to five minutes with a stir halfway — at this size the margin between toasted and burnt is narrow. Work over a tray when coating and reuse what falls away.

Storage
Sealed, cool, dark and dry. Refrigerate once opened — the smaller the cut, the faster the fat oxidises. At a kilo, decant a working portion rather than opening the full pack for every use.
Questions
Can I just chop kernels myself?
You can, and for small volumes it is fine. What you are buying here is the evenness, which is difficult to hit with a knife and impossible to repeat exactly next time. At production volume the labour cost and the inconsistency both add up quickly.
Granules or slivers?
Granules to distribute — coating, folding, crunch through a layer. Slivers to be seen — garnish and finishing.
Is the cut consistent between orders?
The size specification holds. Natural colour variation between harvests still applies, because nothing is added to flatten it out.
